OK, now that all of my shameless self promotion is out of the way…lunch!

Last night I marinated up a Greek-ish salad.  Today I just had to add in the chickpeas and toast up a pita.  Deeeelish.

In the bowl: English cucumber, tomato, red onion, orange pepper, light feta, Kraft Calorie Wise Balsamic Vinaigrette, Greek seasoning, chick peas.

Served with a (80 calories!) whole wheat pita, toasted in the oven and brushed with EVOO.  Big dollop of organic hummus for schmearing.

For a little something sweet afterwards…dried pineapple & cherries.  On the windowsill for size observation…it’s a tiny little 1/4 cup ramekin.  🙂

Blue skies and warm weather…now we’re talking!

I woke up to the sun beating on my window and almost cooking me out of bed.  Not necessarily a lovely feeling, but hopefully it’s a sign that Summer has arrived!

In honor of the toasty morning I made another iced coffee with light vanilla soy milk to start off the day.  So refreshing!

Lots to do today so I opted to duplicate yesterday’s breakfast of a Nature’s Path Flax Plus waffle with peanut butter, sliced banana and a drizzle of maple syrup.  I ate this one with my hands instead of a knife and fork.  It’s more fun that way!

Tonight Angie and Lynn are coming over for a girl’s night and a chance to unwind from a hectic week, so I put together a spinach dip to give it some time to marinate and get all yummy.  After dicing and mixing, I wanted a quickie lunch.  I took the leftovers of yesterday’s Greek-ish salad and rolled them up with some hummus in a ww tortilla.  (putting the olives on the side so I won’t break a tooth on the pits!)

And since I ran out of iced coffee I decided today was the perfect day to crack open this bottle of Santa Cruz Organic Fair Trade Lemon Tea I picked up at Planet Organic a while back.  Tastes like homemade!  (which indicates to me that I should save my money and make my own…but this sure was handy!)

The rest of the day will be spent cleaning up the work week, tidying the house, and making up the guest beds for the ladies.  We intend to drink a whole lotta wine tonight so a sleepover is a must.  🙂

A reality TV intervention!  No sooner did American Idol end and So You Think You Can Dance has started.  Good Lord!  You will all be happy to know that FH gets home on Sunday and the reality TV will be cut waaaaaaay back.

Before heading out to work in the yard, I grabbed two of these yummy “butterfly” cookies I bought at the Dollar Store of all places.  They remind me of these awesome cookies I used to get at an Italian cafe in Victoria (although I will say maybe a little stale tasting…but still yummy!).

But then my lawnmower still wouldn’t start.  I read the manual and my guess is dirty or dead sparkplug.  That sounds like a job for FH!  So until then we are the slackers on suburbia street that haven’t mowed our lawn.  Oh well!

Annoyed and in need of an outlet I changed my clothes, ate half a banana, and headed straight to the gym.  Awesome 20 minute run on the treadmill (sadly I swear I made it through the last 8 minutes watching a freaking Idol recap on the TVs…I told you I need an intervention!) with a quick 3 minute cooldown.  Followed up with upper body strength and abs.

3 sets of 15: tricep pulldowns (15lbs), bicep curls (25lbs), military presses (25lbs)

30 regular crunches

30 bicycle crunches

30 reverse crunches

2 x 30 sec side planks (1 each side)

I also sneaked a peek at a personal training session that was going on and learned a new type of pull-up I’m going to try next time.  (bwahaha…I love it when that happens…I’m still waiting to catch someone doing deadlifts properly)

The sunset was BEAUTIFUL on my way home.  When I got inside I tried to take a photo from my back deck, but the neighboring houses were blocking the actual sun.

Dinner was a quick reheat of last night’s leftovers…meatballs and macaroni.  This time served with a side of steamed brocolli.

Dessert was a couple more of the butterfly cookies I snagged from the box before I got smart and put them away!

Emotionally and physically. Without getting into too much detail, I found out yesterday that Mojo is in renal failure. He’s home for weekend, but the prognosis is BAD.

By the end of the day yesterday I was so tired I just wiped out when I finally got to sit down. Doggie had to go out about every 2-3 hours, so my sleep was sporatic at best. I’m just drained and I’m unsure about leaving him alone so I won’t be gyming it today. I actually think I would feel good if I went, but I just can’t do it. The weather is ass, but if the dog seems comfortable for a while I might try to get out for another walk around the neighborhood. We’ll see how it all goes.

Last night I ended up making a homemade open faced taco thingy for dinner instead of the Smart One. The vet suggested I try cooking Mojo some ground meat to see if he would eat (he didn’t) so I cooked up some ground turkey, pulled some out for him, and did the rest up for myself. I added a packet of taco seasoning, some frozen spinach, corn & black beans. I put it on top of a small tortilla, then topped with light cheddar, salsa and light sour cream. It was actually pretty good and I have lots of leftovers so I don’t have to worry about meals this weekend while looking after the dog.

Eating is actually the last thing on my mind, but so far this is how I see it for today…

– lotsa water, I’m crazy dehydrated and thirsty
– Bolthouse Berry Smoothie slurped from the bottle
– coffee…although believe it or not I’m not overly into it today
– small Ancient Grains tortilla with natural PB & 1/2 banana
– cherries
– Source ff lemon yogurt & raspberries
– there’s salad to eat up, so that will probably do for lunch type meal
– dinner is the leftover turkey taco stuff
– some sort of evening comfort treat….maybe a cupcake or hot chocolate or something
